The Tokeneke Club welcomes back Nick Rondon as our Food & Beverage Director. Nick grew up in Brooklyn, New York. He currently resides in Trumbull, CT with his wife Mandi and his four children: Isabelle, 15; Madeline, 11; Willis, 9; and Brooklyn 3.
For the nine years prior to joining the Tokeneke Family, Nick worked for the Fort Pond Bay Company helping run some of their restaurants including Harvest on Hudson (Hastings, NY) and Half Moon Restaurant (Dobbs Ferry, NY). When it opened in 2008, Half Moon Restaurant received an exceptional, 4 out of 5 stars, rating from The New York Times. Nick has worked in the restaurant industry for over 18 years and in the process has gained extensive knowledge of all aspects of the food and beverage industry. Earlier in his career, Nick worked for Lusardi's of Larchmont and assisted in the opening of Moscato Restaurant in Scarsdale, New York. Nick adds to the friendly and welcoming atmosphere in the Dining Room.


Chef Justin is excited to be at Tokeneke and build on an 18+ year culinary career. During his tenure, Justin has worked for many top restaurants and country clubs in New York and Connecticut. He currently lives in Port Jervis, New York with his wife, Lisa, a stylist at Salon O in Greenwich, and their son Spencer, 18. He enjoys fly fishing, hunting, and anything that lets him spend time in the great outdoors.
Justin received a degree from the French Culinary Institute in New York in 2001 and interned at L'Ecole Restaurant in New York. After stints at Borsa Restaurant (Istanbul, Turkey), Liberty National Golf Club (Jersey City, NJ), and Carltun on the Park (Eisenhower Park, NY), Justin also started his own restaurant in Mahopac, NY. His restaurant, The Moonstone on Long Pond, was proclaimed a New York Times destination stop in 2004. In 2006, Justin was hired as Executive Chef at the Tamarack Country Club in Greenwich where he managed all kitchens for all member/non-member events. In 2011, Justin became the Executive Chef at the Knollwood Country Club in Elmsford, NY. At Knollwood, Justin managed all aspects of the food & beverage offerings for the club and significantly improved the club's dining experience.
Justin's world class experience in French, Italian and Modern American cuisine blends well with Tokeneke's philosophy of simply prepared dishes made from the highest quality seasonal ingredients.
